Salad
2 cups (handfuls) Organic mesclun salad (or greens of your choice)
1 piece (medium) Heirloom tomato, diced
4-5 pieces (greens) Olives, pitted and sliced
1 piece Cucumber, diced
1-2 TBSP Chickpeas
1 tsp Pumpkin seeds (or seeds of choice)
Dressing
1 TBSP Organic olive oil
1 TBSP Lemon juice, apple cider vinegar or balsamic
Dash of salt and pepper

Wash and prepare ingredients and mix together in a large salad bowl, or on individual serving plates.
