1/2 cup Onion
6 pieces Garlic
4 cups Mushroom
200 ml Heavy Cream / Fresh Cream
2 tsp Black pepper
1 tsp Salt
1 liter Water
1 cup All Purpose Flour
2 TBSP Corn Starch / Flour

Saute Mushrooms

In a large pot, melt the butter over medium heat. Add the sliced mushrooms and cook for about 5-7 minutes until they release their moisture and start to brown. Remove a few mushroom slices for garnish if desired and set them aside.

Cook Onion and Garlic

To the same pot, add the finely chopped onion and minced garlic. Saute for 3-4 minutes until the onion becomes translucent and aromatic.

Make Roux

Sprinkle the all-purpose flour over the mushroom and onion mixture. Stir well to create a roux and cook for 2 minutes to remove the raw flour taste.

Add Broth

Gradually pour in the vegetable or chicken broth while stirring constantly to avoid lumps. Add salt, and black pepper. Bring the mixture to a simmer and cook for about 15-20 minutes, allowing it to thicken.

Blend the Soup

Use an immersion blender or transfer the soup to a blender (in batches if necessary) and blend until smooth. Be cautious when blending hot liquids.

Add Heavy Cream

Return the blended soup to the pot and stir in the heavy cream. Heat the soup over low heat for an additional 5 minutes, stirring occasionally. Taste and adjust the seasoning if needed.
