1 cup Kale, de-stemmed, ripped into smaller pieces
1 cup Spinach
1 piece (yellow (or any color) Carrot (chopped)
1/2 piece Avocado, sliced
1/3 cup Black beans (washed and drained)
1/3 cup Red cabbage (chopped)
1/2 small, (about 1/2 cup) Sweet potato (cubed (I cooked this one in the microwave :))
2 TBSP Sun-dried tomatoes
Dressing
1 TBSP Apple cider vinegar
1 tsp Fresh lemon juice
1 TBSP Extra virgin olive oil
Salt and pepper to taste
